Lemon Tart

This is a great Spring or Summer tart...and "tart" describes it well.

Ingredients
1 Cup + 2 Tbs Sugar
1 Cup + 2 Tbs Heavy Cream
8 Egg Yolks
3 Eggs
3/4 Cup Lemon Juice
Zest From One Lemon
Store Bought Pie Dough or Your Own Recipe


Preparation

  1. Combine all ingredients and mix well with a whisk or an immersion blender
  2. Line a pie pan or tart pan with the dough and finish edge accordingly
  3. Pour mix into shell (you may have leftover mix depending on the size and depth of pan you're using)
  4. Bake at 350 degrees until center is almost set but still a little jiggly (about 35-45 minutes)
  5. Cool then refrigerate until cold
  6. Serve with sugar macerated berries, whipped cream, melted white chocolate or all of the above.
