Lemon Cookies Recipe

A lemon and coconut cookie.


 
 



Ingredients
By Measure
1 cup butter
1 1/2 cups sugar
2 eggs
Zest from 1 lemon
2 1/4 cups flour
1/2 cup shredded coconut
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt

 
 


Preparation

  1. Cream the butter and sugar together. Next, add the eggs and mix well. Sift and mix together the flour, baking soda and baking powder. Add the flour mixture to the butter mixture. Combine the dry with the wet ingredients then add the lemon zest and coconut. Mix until the dough comes together. Do not over mix.
  2. Refrigerate the dough for one hour. Shape and portion the dough into 3/4 inch balls then roll them in powdered sugar. Make sure the cookies are well coated with the powdered sugar. Place on a non-stick baking surface.
  3. Bake at 350 for 12-16 minutes - depending on the oven. The edges will become lightly toasted. Allow to cool, then serve. Makes about 2 dozen cookies.
