Ingredients
For The Crust:
1 1/2 Cups Graham Cracker Crumbs
6 Tbs Melted Butter
NOTE: Can use a premade graham cracker crust.
For The Filling:
1 14 Ounce Can Sweetened Condensed Milk
8 Ounces Mascarpone or Cream Cheese
4 Egg Yolks
1/2 Cup Key Lime Juice
Preparation
For The Crust:
- Mix the graham cracker crumbs and the melted butter together well then press evenly in an 8 or 9 inch pie pan.
For The Filling:
- Combine all filling ingredients and puree in a food processor or with an immersion blender
- Pour into crust and bake at 350 degrees until mostly set and you see little bubbles on the surface - anywhere from 15-25 minutes depending on the temperature of the ingredients when you started
- Chill and serve
