The best meatloaf from Mrs. Julia Child herself.
Ingredients
By Measure
2 cups minced onions2 tablespoons butter
1 cup pressed-down bread crumbs
2 pounds ground beef chuck
1 pound raw ground turkey
1 cup cooked rice (see note)
2 large eggs
1/2 cup beef or chicken stock
2/3 cup grated Cheddar cheese
2 cloves garlic - minced
2 teaspoons salt
1/2 teaspoon black pepper
2 teaspoons thyme
2 teaspoons paprika
1 teaspoon allspice
1 teaspoon oregano
3 bay leaves
1 cup ketchup
Preparation
- Saute the onions in the butter until lightly caramelized
- Add onions and remaining ingredients except bay leaves and ketchup into a large bowl
- Mix with your hands until everything is incorporated then form into a loaf on a sheet pan or in a loaf pan
- Top with the bay leaves and bake at 350 degrees for 20 minutes then top with the ketchup
- Continue baking until a meat thermometer says 155 degrees
- Allow to rest for 20 minutes before serving
