This recipe is pretty basic. The discovery for me was to let the flour hydrate and build on the chicken for at least 1 hours before frying.
Ingredients
4 – 6 ounce skinless breast of chicken
¼ teaspoon ground black pepper
Pinch cayenne pepper
Pinch poultry seasoning
Pinch paprika
Pinch of garlic powder
½ a pinch foenugreek
2 teaspoons water
1 cup all-purpose flour
Oil for skillet frying
Preparation
Method
Season the chicken with the spices and water then allow to marinate for 3 hours covered and refrigerated.
Pour off any excess liquid then add the flour to the chicken. Toss the chicken in the flour to make sure it is coated well. Cover the chicken then refrigerate for 1 hour.
Ready to fry: Using a skillet at medium heat add the oil. Use a depth of ¼ inch canola oil. The oil temp should be 330-350 degrees F. Shake off any extra flour then fry the chicken turning just 3 times. 3-4 minutes between each turn. Cook until done. Season with salt and pepper.
