Ingredients

Serves 4
4 - 1/3 pound hamburger patties
2 large baked potatoes, cooled and sliced into 1/2 inch slices
1/2 cup onion, 1/4 inch sliced
1/2 cup carrot, 1/4 inch sliced
4 large mushrooms sliced
1/2 teaspoon oregano
2 teaspoons fresh garlic
Salt and pepper to taste
4 tablespoons butter
Roll of heavy gage aluminum foil, 8 - 18 inch strips

1/2 cup carrot, 1/4 inch sliced
4 large mushrooms sliced
1/2 teaspoon oregano

4 tablespoons butter
Roll of heavy gage aluminum foil, 8 - 18 inch strips
Preparation
- Take 2 pieces of foil. Place one on top of the other. Place 1 hamburger patty in the center of the foil. Season the beef with a generous amount of salt, pepper and pinch of oregano. Next, add 1/4 of the onions, carrots, potatoes and mushrooms. Season the vegetables with salt and pepper. Place over beef patty. Top with 1/2 teaspoon of garlic and 1 tablespoon of butter. Fold the foil over the meat, vegetables, butter and garlic making sure to create a seal. Make sure it is sealed well! Double fold the seams... pinch the folds tight. Repeat. If you do this well no juices will escape. The meal cooks in its own juices.
- This dish is designed for the campfire. It takes skill and time. I have burned plenty because I got in a hurry. The best practice is to place the dinner next to the coals and rotate every 10 minutes or so. The cooking time will take an hour or more next to a good set of coals.
- Remove from heat and allow to stand for 5 minutes before serving.
- Eat straight out of the foil just like a baked potato. When you are done there are no dishes to clean.
