Hazelnut Toffee Recipe

I like to mix up the chocolates. Use dark chocolate on one side and white chocolate on the other or melt butterscotch chips instead of chocolate. Have fun and enjoy.

 

Hazelnut Toffee Recipe

Ingredients
By Measure
4 Sticks (1#) Butter
2 Cups Sugar
2 Tbs Light Corn Syrup
2 tsp Cinnamon (optional)
1 1/2 Cups Chopped Toasted Hazelnuts (or your favorite nut)
4 Cups Chocolate For Melting - Your Choice

 
 


Preparation

  1. Lightly spray a 1/2 sheet pan then lay down non-stick parchment paper and spray again or you can use a Silpat® mat in place of the parchment paper
  2. In a sauce pan bring the butter, sugar and corn syrup to a simmer, stirring often
  3. Continue stirring and bring the mixture to 290 degrees on your candy thermometer
  4. When the mixture hits 290 degrees remove it from the heat and stir in the cinnamon and nuts
  5. Quickly spread this out onto your prepared pan - it should fill the entire 1/2 sheet pan
  6. Set aside and let it cool to room temperature
  7. In a double boiler or in your microwave melt the chocolate
  8. Use half of the melted chocolate and spread it over the cooled toffee then set in the refrigerator to let the chocolate harden
  9. Remove from the refrigerator and gently turn the toffee over and spread the remaining chocolate on the other side
  10. Return to the refrigerator and allow it to harden
  11. Chop and serve or you can store in airtight tins for the Holidays
