German Potato Salad

German Potato Salad

Our version of a traditional German Potato Salad



Ingredients
2.5 pounds boiled, peeled and sliced potatoes (still warm) pre seasoned with a little salt
2 stalks celery diced
1/3 large white onion, diced
¼ pound bacon, cut ½ inch
¼ cup apple cider
½ cup water
¼ cup sugar
2 teaspoons AP flour
Salt and pepper
 


Preparation

Start by browning the bacon in a medium hot skillet. When the bacon is done remove it and set it aside. In the same skillet add the onion and celery to the bacon fat. Cook until the onions are soft. Next, add the flour to the onion mixture and cook for 30 seconds. Add the cider, water and sugar then bring to a simmer. As the mixture simmers it will thicken. When the mixture has thickened pour over the warm potatoes. Add the bacon, mix gently then adjust the salt and pepper to taste.
