Creamed corn with a little hominy focuses on my southern heritage


 
 



Ingredients
By Measure
4 cups fresh sweet corn, cut from the cob
1/4 cup celery, diced
1/4 cup yellow onion, diced
2 cups hominy
pinch of cumin
1 tablespoon unsalted butter
1 1/4 cups heavy whipping cream
1 bay leaf
pinch of thyme
pinch of red pepper flakes
salt and pepper to taste
1 teaspoon fresh minced garlic

 
 


Preparation

  1. Start with a medium hot skillet. Add the butter, followed by the onion and celery. saute the mixture for 3 minutes. Add the garlic and continue to saute for 30 seconds, stirring frequently. Follow the garlic with all the remaining ingredients. Bring the mixture to a simmer. Simmer for 10 minutes. Adjust seasoning with salt and pepper.
  2. (Feel free to reduce the cream for a thicker consistency. It's a matter of taste.)
