Cornmeal Pancake
The cornmeal pancake. AKA the Hoe Cake or the Johnny Cake...depending on what part of the country you're from. Substitute masa harina for the cornmeal for a tamale like flavor.

Ingredients
1 Cup Cornmeal
1 Cup Self-Rising Flour
2 tsp Sugar (Optional)
1 tsp Salt
2 Eggs
1 Cup Buttermilk
1/3 Cup Water
¼ Cup Melted Butter or Corn Oil
Oil For Cooking
Preparation
1. In a mixing bowl add all the dry ingredients and mix together
2. Add the wet ingredients and mix just until everything is wet. It’s important not to over mix so that you don’t develop gluten and make the cake tough.
3. Heat a griddle to 400 degrees or a pan over medium to medium-high heat until hot
4. Add enough oil to lightly coat the griddle or pan
5. Spoon the batter into the desired size
6. Allow to cook until you see bubbles breaking the surface and cake is brown then flip gently
7. Cook until golden and serve
