Corn Bread Recipe

A classic cornbread.      



Ingredients
By Measure
1 cup Corn Meal
1 cup All-Purpose Flour
1 Tbs Baking Powder
3/4 tsp Baking Soda
2 tsp Salt
3 Eggs
2 cups Sour Cream
1 stick Butter
3 Tbs Sugar (Optional)
 
By Weight
6.75 Ounces Corn Meal
7.75 Ounces All-Purpose Flour
.4 Ounce Baking Powder
.1 Ounce Baking Soda
.4 Ounces Salt
3 Eggs
17 Ounces Sour Cream
4 Ounces Butter
1.5 Ounces Sugar (Optional)
 


Preparation

  1. Melt the butter
  2. Stir together the corn meal, flour, baking powder, baking soda, salt and sugar, if using
  3. Stir together the eggs, sour cream and melted butter
  4. Add the wet ingredients to the dry and mix until just combined and everything is moist but lumpy
  5. Bake at 400 until a toothpick inserted comes out clean (about 30-45 minutes)
