Coney Dog Chili

Chili made for a Coney dog but also good by itself



Ingredients
2 pounds 80/20 ground beef
1 tablespoon olive oil
2 tablespoon unsalted butter
1 cup diced yellow onion
1 tablespoon red wine vinegar
1 tablespoons honey
1 tablespoon garlic
½ teaspoon celery seed
1 tablespoon cumin
2 tablespoons chili powder
1 tablespoon paprika
1 teaspoon dry oregano
1 teaspoon dry basil
3 tablespoons ketchup
1 tablespoon prepared mustard
Pinch cinnamon & allspice
3 tablespoons ground saltine cracker
2 1/2 cups beef stock
½ cup coffee
Salt and pepper to taste
 


Preparation

Begin with a large pot at medium-high heat. Add the oil. When the oil is hot add the ground beef. Cook the beef allowing it to brown. Add the onions and garlic. Continue to cook until the onions are cooked. Add all the remaining ingredients except the ground saltines. Bring to a boil then simmer for 30-45. Add the ground saltines and cook until it thickens maybe 10 minutes. Adjust seasoning with salt and pepper.
Use as a sauce for noodles or for me it’s the right chili for a Coney Dog with cheese and onions.
