Originally used for grilled meats but the herbs and citrus lend so much to many other dishes.
Ingredients
1 cup fresh Italian parsley, chopped fine
1/2 cup olive oil
1/3 cup red wine vinegar
1 teaspoon fresh oregano, chopped fine
3 garlic cloves, peeled
3/4 teaspoon red pepper flakes
1 tablespoon fresh lime juice
Salt and pepper to taste
2 tablespoons yellow onion, minced fine
Preparation
Combine the ingredients into a bowl and allow them to sit for 2 hours refrigerated. Roast, grill, poach your chicken however you like it. Use the Chimichurri as a condiment when the chicken is ready to eat. Chimichurri is a bold flavor that goes well on almost anything. Don’t limit it to chicken. I love it for summer!
