Cheesecake Recipe
Yes you can bake a cheesecake at home. The one pictured was a plain cheesecake that I topped with some fresh strawberries macerated in a little sugar.

Your classic cheesecake with some optional variations.
Ingredients
By Measure
1 1/2 Cups Graham Cracker Crumbs2 Tbs Butter - Melted
1# Cream Cheese
1/2 Cup Mascarpone Cheese
1/2 Cup Sugar
3 Eggs
2 Tbs Lemon Juice
1 tsp Lemon Zest
Preparation
- Mix the melted butter and graham cracker crumbs together
- Press into the bottom of a well-oiled, spring-form pan
- In a mixer combine the cream cheese and mascarpone cheese with the sugar and mix well
- Add the remaining ingredients and mix until combined.
- Heat oven to 350 degrees
- In the bottom of the oven place a pan with about 1" of water
- On the rack above place the cheesecake
- Bake until lightly golden on top, about 35-50 minutes
- NOTE: I like to mix the cheesecake with an immersion mixer but a stand or hand mixer will work as well. Try not to incorporate a lot of air into the batter.
- Feel free to experiment with the base. Add 1 cup coconut or your favorite chopped nut. Mix in some chocolate chips or substitute orange or lime juice and zest for the lemon. Have fun.
