Cheesecake Recipe

Yes you can bake a cheesecake at home. The one pictured was a plain cheesecake that I topped with some fresh strawberries macerated in a little sugar.

Ingredients
By Measure
1 1/2 Cups Graham Cracker Crumbs
2 Tbs Butter - Melted
1# Cream Cheese
1/2 Cup Mascarpone Cheese
1/2 Cup Sugar
3 Eggs
2 Tbs Lemon Juice
1 tsp Lemon Zest

 
 


Preparation

  1. Mix the melted butter and graham cracker crumbs together
  2. Press into the bottom of a well-oiled, spring-form pan
  3. In a mixer combine the cream cheese and mascarpone cheese with the sugar and mix well
  4. Add the remaining ingredients and mix until combined.
  5. Heat oven to 350 degrees
  6. In the bottom of the oven place a pan with about 1" of water
  7. On the rack above place the cheesecake
  8. Bake until lightly golden on top, about 35-50 minutes
  9. NOTE: I like to mix the cheesecake with an immersion mixer but a stand or hand mixer will work as well. Try not to incorporate a lot of air into the batter.
  10. Feel free to experiment with the base. Add 1 cup coconut or your favorite chopped nut. Mix in some chocolate chips or substitute orange or lime juice and zest for the lemon. Have fun.
