Ingredients
By Measure
1/4 Cup Bacon Fat1 Large Yellow Onion
1 1/2 Ribs Celery
2 Bay Leaves
1 Quart Whole Milk
3 Quarts Cream
1 tsp Nutmeg
3 lbs Pasta
4 lbs White Cheddar
TT Salt & Pepper
Preparation
- Mince the onion and celery
- Heat the bacon fat in a large pot and add the onions, celery and bay leaves
- Cook until soft then add the milk, cream and nutmeg
- Bring to a simmer and add enough salt and pepper so that you could eat the sauce by itself (this will insure that you have enough salt and pepper to season the pasta)
- Add the pasta and simmer until cooked through
- Stir in the cheese and season if needed
