1 1/4 cup all-purpose flour, plus extra flour for rolling.2 teaspoons salt
3 tablespoons unsalted butter, cold and cut into small pieces
1/4 cup cold milk
1/4 cup cold water
1/4 cup all vegetable shortening
Preparation
- Add the flour and salt to a food processor. Blend for 10 seconds.
- Next, add the butter and pulse until the flour and butter resemble cornmeal. This usually takes around 20-30 seconds.
- Add the shortening and mix in the same manner pulsing for 20 seconds.
- Follow that by starting the machine and slowly adding the cold milk and water. Mix for 2 minutes. The dough should become a wet soft ball.
- Preheat your oven to 300 degrees F.
- Making a beaten biscuit is similar to making puff pastry. Start by dusting the surface you are working on with flour.
- Place the dough on the flour and roll it into a rectangle 1/2 inch thick.
- Dust the surface of the dough and fold it into thirds. Repeat this process for 15 minutes. The dough will change consistency and tiny bubbles will be created between the layers.
- After 15 minutes of rolling and folding, roll the dough into a final rectangle to a thickness of 1/2 inch.
- Cut the biscuits into 1 1/2 inch circles and place the biscuits on a cookie sheet covered with foil.
- Prick each biscuit 3 times with the prongs of a dinner fork towards the center of the biscuit.
- Bake at 300 degrees for 30-35 minutes. The tops should develop very little color while the bottom becomes a very light brown.
