Ingredients
By Measure
For The Muffins:

3 Cups All-Purpose Flour
2 tsp Baking Soda
2 tsp Baking Powder
1 tsp Salt
6 Medium Ripe Bananas
1 1/2 Cups Sugar
1 Tbs Vanilla
2 Eggs
2/3 Cup Melted Butter

For The Crumb Topping:

1 1/2 Cups Packed Brown Sugar
1/2 Cup All-Purpose Flour
1/2 tsp Cinnamon
3/4 Stick Cold Butter

 
 


Preparation

For The Muffins:
  1. Stir together the flour, baking soda, baking powder and salt
  2. In a mixing bowl add the bananas and sugar and mix until the bananas are smashed well
  3. Add the vanilla and eggs and mix until combined
  4. Add the melted butter and mix until combined
  5. Add the dry ingredients and mix until everything is wet
  6. Scoop into a greased muffin pan then follow instructions below

For The Crumb Topping:
  1. Stir together the brown sugar, flour and cinnamon
  2. Using your fingers rub the butter into the dry ingredients until it is combined and coarse
  3. Top the scooped muffins with the topping
  4. Bake at 375 degrees until a toothpick inserted comes out clean (about 16-20 minutes)
  5. Allow to cool for 15 minutes before taking out of pan
  6. Makes about 18-22 muffins

NOTES: Adjust this recipe to the way you want it. Add a cup or two of toasted and chopped walnuts or pecans. Maybe a cup of white chocolate chips . Whatever.
