For The Muffins:3 Cups All-Purpose Flour
2 tsp Baking Soda
2 tsp Baking Powder
1 tsp Salt
6 Medium Ripe Bananas
1 1/2 Cups Sugar
1 Tbs Vanilla
2 Eggs
2/3 Cup Melted Butter
For The Crumb Topping:
1 1/2 Cups Packed Brown Sugar
1/2 Cup All-Purpose Flour
1/2 tsp Cinnamon
3/4 Stick Cold Butter
Preparation
For The Muffins:
For The Crumb Topping:
NOTES: Adjust this recipe to the way you want it. Add a cup or two of toasted and chopped walnuts or pecans. Maybe a cup of white chocolate chips . Whatever.
- Stir together the flour, baking soda, baking powder and salt
- In a mixing bowl add the bananas and sugar and mix until the bananas are smashed well
- Add the vanilla and eggs and mix until combined
- Add the melted butter and mix until combined
- Add the dry ingredients and mix until everything is wet
- Scoop into a greased muffin pan then follow instructions below
For The Crumb Topping:
- Stir together the brown sugar, flour and cinnamon
- Using your fingers rub the butter into the dry ingredients until it is combined and coarse
- Top the scooped muffins with the topping
- Bake at 375 degrees until a toothpick inserted comes out clean (about 16-20 minutes)
- Allow to cool for 15 minutes before taking out of pan
- Makes about 18-22 muffins
