Asian Melon Salad Recipe
My favorite way to eat a melon is right from the fridge, however, every year during the summer months local farmers supply us with unforgettable melons. As soon as I have a surplus this is what I like to do with them.

A great summer salad. The lime always makes me feel better.
Ingredients
By Measure
2 cloves garlic3 tablespoons brown sugar
2 tablespoons lime juice
1 teaspoon lime zest
1 fresh Serrano pepper, sliced very thin
2 tablespoons chopped cilantro
1/2 cup roasted cashews
3 cups cantaloupe melon, peeled, seeded, julienned
1 tablespoon fish sauce - optional
Preparation
Combine all the ingredients and serve with fish, poultry, pork, or beef.
