Arkansas Style Marinade Recipe

I use this as a marinade and also as a mop at home. Marinate the meat for 24 hours. 1/2 cup per pound of chicken or pork. Mop with the marinade as the meat is cooking. The only rule is separate the Mop from the Marinade. Do not cross contaminate. If you are a fan of the vinegar this might be a keeper. I have been using it for years.

A vinegary marinade just perfect for pork and chicken.



Ingredients
By Measure
2 cups water
1/3 cup brown sugar
1/3 cup Worcestershire sauce
1/3 cup yellow mustard (Ball park style)
1/8 cup ground black pepper
1/8 cup red pepper flakes
1 cup ketchup
1 cup red wine
3 cups red wine vinegar
1/3 cup salt

 
 


Preparation

  1. Bring the mixture to a boil and simmer for 30 minutes.
  2. Cook in stainless steel or a enamel pot. Do not use aluminum.
  3. Bottle it using sanitary accepted procedures.
