Whoopie Pie


Ingredients
For the cookie
1 1/2 cups sugar
½ cup butter
2 eggs
¼ cup vegetable oil
1 teaspoon vanilla extract
3 cups all-purpose flour
1 cups unsweetened cocoa powder
½ teaspoon baking powder
2 teaspoons baking soda
½ teaspoon salt
½ cups milk
For the Filling
1 ½ cups powdered sugar
¾ cup shortening
¾ cup marshmallow topping
½ teaspoon vanilla extract
1 teaspoon of milk if necessary (optional)
 
Preparation

For the cookie
Preheat the oven to 350 degrees. Start by creaming the sugar, butter. When that is ready add the oil, vanilla extract and eggs while mixing.
Combine the flour, cocoa, baking powder, baking soda and salt. Mix to evenly distribute. Add 1/3 of the dry mixture to the butter mixture. Mix just to incorporate. Add the milk and remaining dry ingredients in 2 stages. Blend well.
Using a large spoon, portions on a cookie sheet. This should give you 16-18 circles of batter. They will spread so leave plenty of room for that.
Bake for 16 minutes then allow to cool completely.
For the filling
Using a mixer whip the sugar, shortening, marshmallow topping and vanilla extract. Blend well. Add a teaspoon of milk if too thick. Blend well.
 
Use as a filling between two cooled cookies.
