Szechuan Chicken
Ingredients
For Chicken:
1# Chicken Breast Cut Into 1 inch Cubes
2 Tbs Soy Sauce
2 tsp White Vinegar
4 Tbs Corn Starch
For The Sauce:
½ Cup Thinly Sliced Shallots – Substitute Red Onion If Needed
1 Tbs Minced Ginger
1 ½ Tbs Minced Garlic
1 ½ tsp Szechuan Peppercorns Roughly Chopped – Use less if a less spicy dish is desired
1 Tbs Soy Sauce
2 tsp White Vinegar
½ Cup Red Chili Sauce – Substitute Sambal or Sriracha
1 Tbs Sesame Oil
¾ Cup Diced Yellow Onion
¾ Cup Diced Bell Pepper – Red, Green, Yellow Or A Mixture
½ Cup Sliced Green Onions
Salt To Taste
Preparation
For Chicken:
1. Marinate chicken in soy sauce and vinegar for 30 minutes
2. Toss chicken in corn starch
3. Fry in 1/4 inch of oil over medium-high heat until golden
4. NOTE: If chicken is not cooked through finish in a 350 degree oven
For The Sauce:
1. Heat 1 Tbs oil in a sauté pan over very high heat
2. When oil begins to smoke add thin sliced shallots or red onion
3. Cook until lightly caramelized
4. Add ginger, garlic and peppercorns and cook for one minute
5. Add the soy sauce, vinegar, chili sauce and sesame oil and cook for one minute
6. Add the yellow onion and bell peppers and cook until slightly soft
7. Add in the cooked chicken and stir to coat evenly – this is a drier dish so there isn’t a lot of sauce
8. Season with salt and garnish with green onions
9. Serve over rice or noodles
