Southern Style Green Beans Recipe
Ingredients

8 strips Jowl Bacon, cut into strips
5 cups low-sodium chicken stock
1 yellow onion, sliced
4 cups green beans fresh or frozen
1 ham hock Optional, (This helps create what some call pot liquor)
Preparation
Start by crisping the jowl bacon in a medium hot skillet. When the jowl bacon is ready add the rest of the ingredients. Cook at low heat for 2 hours adding water if necessary. You can eat then right away if you would like.
The beans are like a good chili. What I like to do is refrigerate them for 24 hours when fully cooked. The flavor will mature. Heat them up the next day and check the seasoning with salt and pepper.
