Rice Cake


Ingredients
4 cups cooked basmati rice
1 cup coconut milk
½ cup chopped roasted peanuts
¼ cup fresh cilantro, fresh, chopped
2 tablespoons minced ginger
2 teaspoons minced garlic
4 eggs
½ teaspoon lemon zest
Salt and pepper to taste
 
Preparation

Combine all of the above ingredients in a bowl mix well. Prepare a 9x9 cake pan with nonstick spray. Place rice mixture in pan and cover with aluminum foil. Bake in a preheated oven at 375 degrees F until eggs are set. Allow to cool. Cut into squares. Refrigerate for later or used as directed below.
When ready to cook sauté on each side at medium high temp. Brown top and bottom. It’s a form of fried rice.
