Quiche


Ingredients
1 cup fresh spinach
1/4 cup sweet red bell pepper, diced
1 leek, trimmed of the top then sliced
1 tablespoon olive oil
¼ cup sour cream
½ cup cream
5 eggs
2 ounces cheddar cheese
1 ounce parmesan cheese
Salt and pepper to taste
1 pie shell
 
Preparation

Preheat oven to 350 degrees F.
Start by heating a sauté pan to medium heat. Add the olive oil to the sauté pan. When the oil is hot add the leeks. When the leeks have cooked for 2-3 minutes add the bell pepper. Cook for another 3 minutes then add the spinach. Season with salt and pepper then allow the mixture to cool.
In a bowl combine the eggs, sour cream and cream. Whisk together until well incorporated. Season the egg mixture with salt and pepper.
To build the quiche first add the cheddar to the empty pie shell. Follow that with the cooled vegetables and then the egg mixture. Top with the parmesan cheese and bake for 20-30 minutes until the eggs are set.
