Potato Salad Recipe


Ingredients
By Measure
1 1/2 # Bacon
1/4 Cup Mustard
1/2 Cup Brown Sugar
1/2 Cup Cider Vinegar
1/2 Cup Red Wine Vinegar
1 1/2 Red Onions
3# Yukon Gold Potatoes
1# Baby Spinach
2 Tbs Garlic
Salt & Pepper TT

 
 
Preparation

  1. Cut the potatoes into large pieces, about 1 inch
  2. Roast in a 400 oven until a toothpick inserts easily
  3. Chop the bacon into small pieces and render in a saute pan over high heat until 75% cooked
  4. Add the onions and cook until translucent
  5. Add the garlic and when you smell it then...
  6. Deglaze the pan with the vinegars and let cook until syrupy
  7. Add brown sugar and let cook down
  8. Fold in the potatoes and season with salt and pepper
  9. When you are ready to serve fold in the spinach
