Oatmeal Peanut Butter Cookies Recipe
Ingredients

1 Stick Butter - Softened
6 1/2 Tbs Shortening
1 Cup Brown Sugar
3/4 Cup Sugar
1 1/4 Cups Peanut Butter
2 Eggs
2 tsp Vanilla
1 1/2 Cups AP Flour
1 tsp Baking Soda
1/2 tsp Salt
2 Cups Oats
By Weight
4 Ounces Butter - Softened
3.25 Ounces Shortening
7.5 Ounces Brown Sugar
5.5 Ounces Sugar
9.5 Ounces Peanut Butter
2 Eggs
7 Ounces AP Flour
.4 Ounces Baking Soda
.2 Ounces Salt
2 tsp Vanilla
4.5 Ounces Oats
Preparation

Cream sugars with butter, shortening and peanut butter then scrape down sides of bowl

Add eggs one at a time

Add vanilla
-
Stir together the flour, baking soda and salt and add to wet mixture in increments

When fully incorporated scrape down sides of bowl and add oats

Mix until incorporated then scoop and bake at 400 degrees for 10-12 minutes or until golden

Makes 24-30 cookies
