Meatballs Recipe


Ingredients

1/2 pound ground pork
1 1/2 pounds ground beef
3 cloves minced garlic
1/4 cup minced yellow onion
1 cup parmesan cheese
3/4 cup ricotta cheese
2 tablespoons fresh flat leaf parsley
1 teaspoon fresh oregano
2 cups plain breadcrumbs from Italian bread
1/2 teaspoon red pepper flakes
2 eggs
(1 cup of olive oil if sautéing)
Salt and pepper to taste
 
Preparation

  1. Combine the ingredients in a large bowl. Mix well to distribute the flavors evenly. Cover and refrigerate for 30 minutes. Shape into 1 1/2 inch meatball and place on a buttered sheet pan.
There are 2 options for cooking

  1. Bake meatballs on the sheet pan at 375 degree F. Cook until done. Add the cooked meatballs to your sauce. Simmer for 30 minutes.
  2. Pan-fry in small batches the meatballs. This should take about 6-8 minutes per batch. Use the olive oil listed above for this step. You may require more or less olive oil for this step. Adjust accordingly. You need a thin coat of oil for each round of cooking meatballs. Finish cooking the meatballs in your favorite marinara sauce at a gentle simmer.
