Low Carb Pizza Crust


Ingredients
2 1/2 cups grated cauliflower (about 1/2 a large head)
1 large egg, lightly beaten
1 ¼ cups Fresh Goat Cheese or shredded part-skim mozzarella cheese
2 tablespoons grated parmesan cheese
Salt and freshly ground black pepper
 
Preparation

 
Line a rimmed baking sheet with parchment paper, and preheat oven to 425ºF.
Grate the cauliflower using a box grater until you have two cups of cauliflower. The cauliflower size should resemble cooked couscous. Place in a large bowl and microwave for seven to eight minutes, or until soft. Remove from the microwave and let cool.
Now that the cauliflower is cool mix in the egg, goat cheese or mozzarella, parmesan cheese, salt and pepper. Mix well. Spray your pan well with a nonstick spray. Pat the mix into a 10-inch round pizza pan or a spring-form pan. Bake for 10 to 15 minutes, or until golden.
Use as a prebaked pizza dough. Add your toppings then brown.
