Curried Beef or Chicken Recipe


Ingredients

By Measure
For The Spice Blend:

1 tablespoon yellow curry
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 teaspoon coriander
2 teaspoons sesame seeds
1 teaspoon pickled or salted Masala

For The Curry:

1.5 pounds beef tenderloin tips or chicken
1 tablespoon minced garlic
1/4 cup diced onion, carrot and celery
1 tablespoon unsalted butter
2 tablespoons ketchup
1/2 cup cream
1 cup chicken stock
1 tablespoon olive oil
Salt and pepper to taste

 
Preparation

For The Spice Blend:

  1. Combine all ingredients together and mix well.


For The Curry:

  1. Start with a large saute pan at high heat. Add the olive oil to the pan and allow to heat. When the oil is hot gently add the beef or chicken to the pan. Allow the beef or chicken to caramelize on all sides stirring occasionally. Add the onions, carrots and celery. Cook mixture for 30 seconds then add the garlic and butter. Make sure the butter is in contact with the bottom of the pan. Wait 20 seconds then add the chicken stock to deglaze the caramelization you have created by sauteing the beef or chicken. Add the spice blend, ketchup and cream. Reduce the heat to a simmer. Cook until the sauce coats a spoon. Adjust seasoning with salt and pepper. Serve over rice or noodles.
