Cracker Meal Fried Fish Recipe

6 - 4 ounce fillets of cod
2 cups Soda Cracker meal
1 cup flour
3 whole eggs
1 teaspoon ground black pepper
Corn oil for frying
Salt and pepper to taste
 
Preparation

  1. Cracker meal: If you can't find it on the store shelves add one sleeve of soda crackers to a food processor. Grind the crackers until they resemble the size of corn meal. If you don't have a food processor you can use a rolling pin.
  2. You will need 3 containers. In the first container place the flour. In the second container place the beaten eggs. In the third container place the soda cracker meal and the ground black pepper.
  3. Dry off fish with paper towels if it is wet.
  4. This breading is a three step process...
  5. Dredge each fillet of fish in the flour. Dust off excess.
  6. Place each fillet of fish in the egg mixture. Shake off excess.
  7. Mix the black pepper and cracker meal together. Place each fillet of fish in the cracker meal. Make sure the fish is coated with the cracker meal.
  8. Now you are ready to fry. Pan frying is the way I cook my fish at home. I hate to waste all that oil. Add enough oil to your saute pan to have 1/4 inch of oil in the pan. Heat 1/4 inch of oil to 335-350 degrees F. Gently place each fillet of fish in the oil and cook for 4-5 minutes on each side until the fish is fully cooked. The time necessary to cook will be dependent on the size of the fish fillet. When the fish is fully cooked place it on paper towels and season with salt and pepper to your taste.
