8 Ears Corn – Kernels Removed
1 Red Bell Pepper – Small Diced (Roughly the same size as the corn kernels)
1 Red Onion – Small Diced (Roughly the same size as the corn kernels)
1 Quart Cider Vinegar
2 Cups Water
3-4 Cups Sugar – Taste and adjust to how sweet or sour you like it
1 tsp Red Pepper Flakes
1 tsp Chopped Garlic
1 Cup Chives – Chopped
Salt To Taste
1. Mix the corn, bell pepper and onion together in a bowl or container and set aside
2. Bring the vinegar, water, sugar, red pepper flakes and garlic to a simmer
3. Allow this to cool to warm or room temperature – if it’s too hot it will cook the vegetables too much and reduce their color and vibrancy
4. Pour over the vegetables, cover and refrigerate overnight or up to three days
5. When ready to use strain off the liquid and reserve to use again
6. Add the chives to the corn mixture and season with salt to taste
7. This is great in a potato or egg salad or as a garnish to grilled meats but it’s pretty versatile so use it anywhere you want
