Buttermilk Dressing Recipe


Ingredients
By Measure
1/4 cup small diced cucumber
1/2 cup reduced fat sour cream
1 cup reduced fat mayonnaise
1 teaspoon apple cider vinegar
2/3 cup light buttermilk
1 teaspoon minced garlic
1 tablespoon shredded yellow onion
Salt and pepper to taste
 
Preparation

  1. Combine all of the ingredients. Mix well. Season the dressing with salt and pepper to taste. Refrigerate for one hour then serve.
  2. Feel free to add a little water if it needs to be thinned down to your taste.

    Feel free to use regular sour cream, mayonnaise and buttermilk.

    When it comes to Derby time it's hard to get all of my favorite ingredients all on the table. That's why I came up with the Kentucky Cobb salad. Here are several of my favorite ingredients I want any guest to have around Derby.
    Watercress
    Boiled eggs
    Country Ham
    Biscuit Croutons
    Pickled onions
    Spring peas
    Green onions
    Cherry Tomatoes
    Cucumbers
    Cucumber Buttermilk Dressing

    All garnished with a piece of fried chicken. We are proud of our State and love sharing it with anybody that might listen. Have a good Derby.
