Buttermilk Biscuits

4 cups AP flour
4 teaspoon baking powder
1 teaspoon baking soda
1 1/2 teaspoon salt
1 cup unsalted butter cut into small cubes
2 cups buttermilk
1 teaspoon cider vinegar
Preparation
Start by adding 2 cups of flour and cold butter to a large bowl. Using the back of a fork cut the butter into the flour. Continue until the mixture resembles a shaggy corn meal. Sift together the remaining flour, baking soda and baking powder into the prepared butter and flour mixture. Add the remaining ingredients and combine gently pulling the dough together. Mix this dough as little as necessary. The dough will seem a little sticky. Divide into two pieces. Flour the table you will work on and a rolling pin. Roll out the dough using flour so it doesnt stick until it is 3/4 inches thick. Cut into shapes and place on a cookie sheet lined with parchment paper or foil. Bake in a preheated oven at 375 for 14-18 minutes.
