Almond Cookies


Ingredients
1 1/4 Cups Sugar
2 Sticks Unsalted, Softened Butter
3 Egg Yolks
2 tsp Almond Extract
2 1/2 Cups Flour
1 tsp Baking Soda
1/2 tsp Cream of Tartar
1 Cup Toasted and Chopped Almonds
Sugar for Rolling
Whole Almonds for Garnish
Preparation

  • Pre-heat oven to 400 degrees
  • In a mixer with a paddle cream the butter and sugar
  • Add the egg yolks and almond extract and mix well
  • Stir together the flour, baking soda and cream of tartar
  • Add to the sugar and egg mixture and mix well
  • Stir in the chopped almonds
  • Scoop into desired sizes and roll in sugar to coat
  • Press a whole almond into the center of each
  • Bake for 11 minutes until lightly golden
